- Put the pasta to cook as usual (water, salt, etc)
- Let the pancetta fat cover cook in the pan, when there's already some rendered fat, put a slightly crushed clove of garlic to cook there too (in one piece so that's easy to take out when it's ready, before burned!)
- Slice the pancetta and mix with the pancetta fat and garlic, let it cook until the fat is rendered. Stir as needed. Remove the garlic as it starts to be golden.
- In a separate bowl, mix 3 egg yolks, black pepper, 40g of parmesan or pecorino and and only a slight pinch of salt.
- When the pasta is ready, transfer it to the pan with the rendered pancetta and everything else. Use pasta water as needed for consistency (be careful of the salt, the pancetta or bacon is already salty by itself). Mix everything until creamy and then plate it.
